Living a Gluten-Free Life and Loving it!

Ten years ago, Colleen Teevin owner of Cloverstone Bakery began developing strange symptoms. She suffered from constant fatigue, arthritis, brain fog and even vertigo, all of which she attributed to a recent trip to South America, so she went to a specialist doctor (well, several doctors) and after two years of examinations and tests, she had no answers. At a dinner party, a friend suggested Colleen examine her diet to try and get to the bottom of things. After removing gluten from her diet, Colleen’s symptoms disappeared within a week.

Even touching or breathing gluten caused Colleen’s symptoms to return so working as a pastry chef, which she had done occasionally since starting college, was not an option. Not ready to give up baking, Colleen filled the void of a gluten-free bakery in the Valley, and in 2011, Cloverstone Bakery was born.

Cloverstone Bakery owner, Colleen TeevinCloverstone Bakery evolved slowly by starting at a local coffee shop in Ketchum, then sharing a kitchen with a catering company, and finally graduating to a kitchen of its own on Warm Springs in Ketchum.

“My parents are both great cooks, and when I lived in Moscow I met some friends who introduced me to baking (and my first baking job) at the Moscow Food Co-Op,” explained Colleen. The rest is history.

“My most popular item is the pumpkin muffin and the peanut butter chocolate chip cookie,” said Colleen.  In addition to muffins, cookies and pizza dough, Cloverstone bakes breads, dinner rolls, cakes, pies and quiche. I can personally attest to the pumpkin muffin’s perfection. Let me just shake the crumbs from my keyboard, I think I'll have one more bite.

Gluten-free oatmeal raisin cookieCloverstone’s baked goods are carried at Atkinsons’ Markets (Hailey and Ketchum locations), Main Street Market, Java Coffee & Café (Hailey and Ketchum locations), and the Konditorei in Sun Valley, with more to come. Cloverstone’s gluten-free pizza dough is used at Rico’s Italian Restaurant and The Red Oven pizza. You can also find Cloverstone’s baked goods at the Ketchum and Hailey Farmers’ Markets on Tuesdays and Thursdays through October 11. In addition to selling items in the Valley, Cloverstone is working on expanding into the Boise market.
