Sawtooth Brewery Beckoning

Stroll down the streets of just about any small resort town similar to Sun Valley and you’ll be hard pressed to not run into a local brewpub. Here in the Wood River Valley we have the Sun Valley Brewery holding down the Hailey area and River Bend Brewing discretely distributing to a few select bars throughout the region.  Yet there still lacks a presence in Ketchum & Sun Valley.

Local beer enthusiasts Paul Holle and Kevin Jones have set out to change that status. These two hop-savvy individuals came together last year with a like-minded vision, “to brew a local beer that locals are proud of.” After my first pint of their Last Chair Stout, I’d say they’re definitely headed in the right direction. photography by Ray J. With fingers crossed you too will be able to grab your very own pint or growler of Sawtooth’s varietal brew here very soon. The boys are eagerly waiting to get their hands on a retail permit to be able to bring you their tasty product. In the meantime, Paul & Kevin will continue to merrily conceive, produce, stock pile and innovate while you anxiously anticipate their tasty concoctions.

For a brewpub that can’t quite legally sell their beverages to the public, Sawtooth Brewery is wasting no time in developing a strong presence in the Wood River Valley. These guys have already teamed up with some of the Valley’s finest to usher in some tasty exclusive offerings.

When Kevin and Paul went to the Hailey Coffee Company asking if they’d be interested in collaborating on a beer, Hailey Coffee Company fired back with a primo specialty roast perfectly suited for their First Chair Stout. You’ll not only be able to enjoy this exclusive roast in beer form but also in the one-pound bag of beans form. The stout legacy doesn’t stop with the coffee. Sawtooth served their tasty concoction with Toni’s chocolate ice cream. The result creates a blissful chocolate coffee stout frozen fusion.

Soon you’ll be able to not only grab a pint of beer but also a pint of ice cream right at the Brewpub. Last but not least, the boys are actively searching for a local bakery to donate their spent grains for delicious bread. So, if you are a moderately sized bakery looking to spice things up a bit, definitely look these guys up.

Keep your eyes peeled around Thanksgiving to get yourselves in to the Sawtooth Brewery so that Kevin and Paul can make you proud!
